    Nutella Ice Cream

    This ice cream is so easy to make, and you wont need a ice cream maker to make it!

    Ingredients:

    - 400ml Double Cream
    - 400ml Milk (Whole or Semi)
    - 6 Egg yolks
    - 200g Caster Sugar
    - 2 Tbsp Nutella

    1. Put the milk and cream into a saucepan with the nutella and put over a medium heat until it comes to the boil. Stir constantly, because you don't want the nutella to stick to the bottom of the pan and burn.

    2. While the nutella mixture is being heated, whisk the egg yolks with the sugar until the mixture is almost white in colour.

    3. Once the mixture has come to the boil, let it cool slightly then 'temper' the eggs by adding a little of the nutella mixture at a time to the eggs and sugar while whisking constantly.

    4. Once combined put the custard mix back over a medium-high heat until it thickens to a custard consistency. Do not let the mixture boil.

    5. Remove from the heat and let it cool to room temperature. Then place in the fridge for an hour before freezing.

    6. Take the ice cream out of the freezer 5-10 minutes before serving.

Sexy Baked American Cheesecake with Strawberry and Vanilla coulis

Here is one of our favourites! This naughty number is the perfect end to any meal, and seriously simple to make.

Ingredients:
CHEESECAKE:

- 600g Cream Cheese
- 10 Digestive biscuits
- 65g Butter , melted
- 2 Tbsp plain flour
- 175g caster sugar
- 3/4 of a Vanilla pod
- 2 Eggs , plus 1 yolk
- 150ml Soured cream

STRAWBERRY COULIS:

- 3 Tbsp Caster Sugar
- 400g Strawberries
- 1/4 of a Vanilla pod
- 2 Tbsp Water

To make the Cheesecake:
Pre heat the oven to 180°C (160°Fan)

1. Put the digestives into a food processor or put them into a plastic bag and smash with a rolling pin until ground to the consistency of bread crumbs.

2. Add the melted butter to the biscuits and add the mixture to a 20cm springform tin and bake for 5 minutes. Leave to cool.

3. Using 3/4 of the vanilla pod slice it down the middle (along the length) scrape the seeds out of the pod with the back of a spoon. Beat together the cream cheese, flour, eggs, sugar and soured cream, until light and fluffy.

4. Pour into the baking tin and bake for 40 minutes. The cheesecake should be slightly wobbly in the middle. Leave to cool.

To make the strawberry coulis:

1. Add the water, strawberries, sugar and remaining 1/4 of vanilla seeds to a pot and put on a medium heat for 15-20 minutes, until the strawberries have softened and all the ingredients have combined.

2. If the mixture is too thick, add 1-2 tbsp of water.

3. Leave to cool, and enjoy the yumminess with the cheesecake!

Hi Everyone! Seeing as i (Josh) am qualified as a personal trainer, i thought i would put up some healthy food recipes, to promote healthy eating and all that! Let me know what you guys think of them! I look forward to hearing from you!

Foody Forum

Hello Everyone! We would love to hear about your own personal favourite foods or recipes. If you want some ideas for using ingredients you may have lying around, or you just want to try something a bit different, post your questions here.

Focaccia Bread

A great one to compliment pasta, or even to tear and share with dips :).

Ingredients:

- 250g Strong white flour
- 1 Tsp Finely ground salt
- 7g Sachet fast action dried yeast
- 150ml Warm water
- 3 tbsp Olive oil
- 2 Cloves of Garlic (Finely chopped)
- Sea salt (Not finely ground)

Making the Dough:

Pre heat the oven to 220°C (Fan 200°C) Gas Mark 7.

1. Add the Salt and yeast to the flour in a bowl, and stir to combine.

2. Add one tbsp of olive oil and the water, and stir with a wooden spoon until a dough is formed.

3. Place the dough onto a lightly flowered surface, and work for 10 minutes until the dough is smooth.

Proving:

1. Pour 1 tbsp of oil onto a surface, place the dough on top of the oil and roll out to roughly 1cm thick all over.

2. Pour 1 tbsp of olive oil onto a baking tray and place the rolled out dough on top, with the side that was face down in the oil previously now facing up (to prevent a crust forming on the dough).

3. Sprinkle the dough with the garlic and sea salt, cover with a tea towel and leave for 30-60 minutes.

Baking:

1. Remove the cloth and press your finger into the dough about 15 times.

2. Pour over a little more olive oil and bake for 10-15 minutes, until golden brown.

3. Leave to cool for 5 minutes. Tear and share. :)

Yummy Bread and Butter Pud

Alright this is our fist post on the site so we thought we would start it off with a bang! So here is the recipe for a good old fashioned bread and butter pud.

Ingredients:

Serves 4-6

- 3 Egg yolks
- 350ml Milk
- 50ml Double cream
- 1 Baguette/Loaf of Brioche (Or both if you're feeling naughty!)
- 50g Unsalted butter
- 50g Caster sugar
- 50g Sultanas
- 30g Dried Cranberries
- 5 tbsp Apricot Jam
- Orange (Zested)
- Demerera Sugar

1. Pre heat the oven to 180°C (Gas mark 4)

2. Spread 2 tbsp of the apricot jam around the baking dish

3. Slice the baguette/brioche into thin slices and butter them on both sides.

4. Layer the slices of baguette/brioche in the baking dish sprinkling the Sultanas and cranberries between each layer as you go.

Making the Custard:

1. Add the milk, cream and orange zest to a saucepan, over a medium heat.

2. Whisk the egg yolks and sugar together in a bowl until light in colour.

3. Once the milk and cream mixture has come to the boil, allow it to cool a little then add the mixture to the eggs and sugar, little at a time, while whisking constantly.

4. Pour the mixture over the bread layers and squash the bread a little so it is completely covered by the custard mixture. Leave it to soak for 15 minutes.

Baking:

1. Sprinkle with demerera sugar and put in the oven for 30-40 minutes.

To Serve:

1. Add 1 tbsp of warm water to 3 tbsp of apricot jam and spread over the top of the bread and butter pudding.

2. Serve warm. Enjoy :)
